These are both modern web formats, so AVIF to WebP is not about quality. It is about reach. WebP arrived years earlier, which means far more software, platforms and content systems know what to do with it.
Because something in your chain will not take an AVIF. Plenty of content management systems, image libraries, marketplace uploaders and social platforms accept WebP and stop at AVIF, and there is rarely a setting you can change from your side.
AVIF compresses better, so you give some of that back. The difference is usually modest, nothing like the jump you would see converting to JPG, and both figures appear on the row so you can judge it per image.
Away from browsers, mostly. WebP has had years to work its way into desktop viewers, editors and publishing tools, while AVIF support in the same software is patchy and often missing entirely. Transparency carries across either way, so nothing about the shape of the picture is lost in the move. Dimensions and colour come through unchanged as well, which makes this one of the gentler conversions to make.

AVIF is smaller and every current browser reads it. WebP is the safer pick when something other than a browser handles your images along the way.
